The Pie Piper is Auckland's North American inspired bakery, with Kiwi flare. They specialize in dessert pies, classic cakes, gourmet donuts, cinnamon rolls and other baked treats. When Danielle is at The Pie Piper, you can usually find her in the Donut Dungeon (the basement work space at Piper K'Rd store) coming up with more ideas and creations. Her last big project was creating a cake which looked like a giant rib-roast. There's always something fun happening at Piper HQ.

Rice Crispie Treats 

 

 What you'll need:

 

  • 6 cups (150gms) Rice Bubbles 
  • 3 Tablespoons (42gms) Butter 
  • 285gms Marshmallows 
  • Optional:  Sprinkles, chocolate chips, or any candies you can find!

Instructions:

 

1.  Grease a cake pan (11" x 13" - or something similar). Put aside.


2.  In a big microwave proof bowl add the butter and marshmallows.  Put into the microwave and heat in 20 second at a time, stirring in between, until the marshmallows are melted (approximately 1 minute).  Or you can do this on the stove on a low-medium heat.


3.  When the marshmallow and butter are melted and gooey, add 1/2 the rice bubbles and mix well and then add the other 1/2 of the rice bubbles.  Work fast as the marshmallow mix needs to stay warm and gooey.  If it gets too cold, pop it back into the microwave for 10 seconds.


4.  When the rice bubbles are mixed through, you can add the optional sprinkles or candies and stir them in.  If you have to handle the mixture with your hands, have clean hands and butter your hands first.


5.  Scoop the mixture into your greased cake pan and pat until firm and flat.  Let them cool down (about 15 minutes) and then cut into squares or shapes.

 

6. ENJOY!
